The olives—carefully blended native varieties: Frantoio, Moraiolo, Leccino, Pendolino — are hand-picked in November at the precise moment that respects natural cycles.

Each fruit is meticulously selected and immediately taken to the mill, where prompt pressing preserves the aromas and organoleptic qualities intact.
